4 cups all-purpose flour
2 tbsp unsalted butter, melted
8 oz block of cheddar or mozzarella cheese, cut into 1-inch cubes
10 cups water
2/3 cup baking soda
1 egg yolk, beaten with 1 tbsp water (for egg wash)
Coarse salt for sprinkling
