Directions:
In a large bowl, dissolve the yeast in warm water. Stir in sugar and let it sit for about 5 minutes until frothy.
Add salt, melted butter, and flour. Knead for 8 minutes until the dough is smooth and elastic. Cover and let it rise for 1 hour.
Preheat your oven to 425°F (220°C) and line two baking sheets with parchment paper.
Divide the dough into 8 pieces. Flatten each piece into a small circle, place a cheese cube in the center, and pinch the dough around the cheese to seal. Shape into pretzels if desired.
Bring 10 cups of water to a boil in a large pot and stir in baking soda. Drop each stuffed pretzel into the boiling water for 30 seconds before transferring to the baking sheets.
Brush the pretzels with egg wash and sprinkle with coarse salt.
Bake for 12-15 minutes until golden brown. Let cool slightly before serving.
