1. Preheat the Oven:
1/ Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil or non-stick cooking spray.
2. Prepare the Chicken:
1/ Season the chicken breasts with salt, black pepper, garlic powder, and paprika, ensuring they are evenly coated.
2/ In a skillet over medium-high heat, add olive oil. Sear the chicken breasts for 2-3 minutes on each side, until golden brown. Transfer the chicken to the prepared baking dish.
3. Sauté the Peppers:
1/ In the same skillet, add olive oil, bell peppers, onion, and minced garlic. Sauté for 5-7 minutes, or until the vegetables are softened and fragrant. Season with salt and black pepper to taste.
2/ Arrange the sautéed peppers and onions over the chicken breasts in the baking dish.
4. Add the Cheese Topping:
1/ In a mixing bowl, combine mozzarella cheese, cheddar cheese, Parmesan cheese, and breadcrumbs. Stir until evenly mixed.
2/ Sprinkle the cheese mixture over the chicken and peppers, covering them completely.
5. Bake:
1/ Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is golden and bubbly.
6. Serve:
1/ Once baked, remove the Cheesy Baked Chicken and Peppers from the oven.
2/ Garnish with chopped fresh parsley, if desired, for a pop of color and freshness.
3/ Serve hot, alongside your favorite side dishes such as roasted potatoes, steamed vegetables, or a crisp green salad.
