Top with Cheese:
Sprinkle both shredded cheddar and mozzarella cheese evenly over the top of the casserole.
Bake:
Cover with aluminum foil and bake for about 45 minutes, or until the potatoes are tender when pierced with a fork. After 45 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is golden and bubbly.
Garnish and Serve:
Once done, let it sit for a few minutes before serving. Garnish with fresh parsley for a pop of color.
