Cheesy Spinach Stuffed Chicken Breasts

1. Prepare the Filling

In a bowl, mix chopped spinach, cream cheese, mozzarella, Parmesan, garlic, salt, and pepper until smooth and creamy.

2. Cut Pockets in the Chicken

Place chicken breasts on a board.
Gently slice a deep pocket on the side of each breast (do not cut all the way through).

3. Season the Chicken

Rub each breast with olive oil.
Season both sides with garlic powder, paprika, onion powder, salt, and pepper.

4. Stuff the Chicken

Spoon the spinach-cheese filling evenly into each pocket.
Secure with toothpicks if needed.

5. Cook the Chicken

Option A — Pan Sear + Bake (best texture):

Preheat oven to 400°F (200°C).

Sear chicken in an oven-safe skillet 3–4 minutes per side until golden.

Transfer to oven and bake 15–20 minutes or until fully cooked.

Option B — All in the Skillet:
Cook over medium heat 6–7 minutes per side, covering halfway through.

6. Optional Creamy Sauce

(Highly recommended!)
In the same pan, whisk broth, cream, Parmesan, and Italian seasoning.
Simmer 3–4 minutes until thickened.
Pour over chicken.

7. Serve

Garnish with parsley.
Serve with mashed potatoes, rice, pasta, or roasted veggies.
