Directions:
1. Prepare the Chicken: Slice each chicken breast lengthwise, cutting all the way through to create thin pieces. Cover with plastic wrap and pound each piece to 1/4” thickness with a meat mallet. This will ensure your chicken cooks evenly.
2. Build the Rollatini: Place two slices of pepperoni and one slice of mozzarella cheese on each piece of chicken. Roll the chicken tightly around the filling, securing it with toothpicks to keep everything in place.
3. Wrap and Chill: Cut four 12″x12″ pieces of plastic wrap. Place each rolled chicken breast on a piece of plastic wrap, then roll it tightly in the wrap. Refrigerate the wrapped chicken for 1 hour to help it hold its shape.
4. Bread the Chicken: Set up two bowls—one with beaten eggs and another with a mixture of breadcrumbs, Parmesan, Italian seasoning, garlic powder, salt, and pepper. Unwrap the chicken rolls, dip each one in the egg, and then coat thoroughly in the breadcrumb mixture.
5. Freeze and Bake: Place the breaded chicken rolls in the freezer for 15 minutes. Meanwhile, preheat your oven to 400°F. Chilling the rolls helps the breading stick better during baking. Once ready, place the rolls in a greased oven-safe dish, spray them with olive oil, and bake for 25-30 minutes.
