How to Make a Chicken Salad Croissant Sandwich
1. Prepare the Chicken
Heat the oven to 375°F (190°C).
Season the chicken breasts lightly with salt and pepper and place them on a baking sheet.
Bake for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
Allow the meat to rest before cutting it into small cubes.
2. Mix the Chicken Salad
In a large mixing bowl, add the diced chicken along with the celery, dried cranberries, and pecans.
Stir in ½ cup mayonnaise and 2 tablespoons of Greek yogurt until the mixture is evenly coated.
If you want extra depth of flavor, season with garlic powder, a squeeze of lemon juice, and a touch of honey.
3. Build the Sandwich
Slice a croissant horizontally.
Add a generous portion of the chicken salad to the bottom half.
Layer on lettuce or tomato slices if you want added freshness and crunch.
Close the croissant and serve right away, or refrigerate it for later.
