How to Make the Sandwich

Cook the Chicken
Preheat the oven to 375°F (190°C).
Season the chicken breasts lightly with salt and pepper and bake for 25–30 minutes, until the internal temperature reaches 165°F (75°C).
Let the chicken rest, then cut into bite-sized cubes.
Prepare the Chicken Salad
In a large bowl, mix the diced chicken, celery, cranberries, and pecans.
Stir in ½ cup mayonnaise and 2 tablespoons Greek yogurt until everything is evenly coated.
Optional: add garlic powder, a squeeze of lemon juice, and a small drizzle of honey for extra flavor.
Assemble the Sandwich
Slice a croissant in half.
Spoon a generous portion of chicken salad onto the bottom half.
Add lettuce or tomato slices if desired.
Close the croissant and enjoy immediately, or wrap and store for later.
