Wash and prepare all the vegetables by cutting them into julienne or slices, as appropriate. Booking.
In a large skillet or wok, heat 1 tablespoon olive oil over medium-high heat. Add the chicken strips and season with salt and pepper to taste. Sauté for 6-8 minutes, or until the chicken is nicely browned and cooked through. Remove the chicken from the pan and set aside.
In the same pan, add the rest of the olive oil and heat over medium heat. Add the minced garlic and cook for 30 seconds, until fragrant.
Add the onion, peppers (red and green), and carrots. Sauté for 5 minutes, stirring constantly, until the vegetables are slightly tender but still crisp.
Add the zucchini and cook for 3 more minutes, making sure it doesn’t overcook.
Return the chicken to the pan along with the vegetables. Add the soy sauce and mix well so that all the ingredients are infused with the flavor. Cook for an additional 2-3 minutes.
Remove from heat and serve hot. Decorate with sesame seeds if desired.
