Instructions
Preheat ove to 350 degrees.
Whisk together flour, salt, baking soda, and cornstarch. Set aside.
In a seperate bowl, cream together butter and sugars on high speed until light and fluffy.
Add in egg and mix well. Then add in coffee and vanilla before scrapind down the sides of the bowl.
On low speed add in the flour mixture and mix just until combined.
Stir in 1 1/2 cups of the chocolate chips. Then spread in an ungreased 9″x13″ pan.
Bake for 20-25 minutes. Allow to cool completely.
While the cookie base is cooling, heat the cream over low heat just under boiling.
Pour the cream over the remaining 1/2 cup of chocolate chips and let sit for a minute or two.
Stir the chocolate and cream until completely smooth. Pour over the cooled cookie base then chill for about 30 minutes or until the chocoalte is set.
Slice into bars and enjo!
