- Prepare the Dough:
- In a large mixing bowl, combine warm milk and yeast. Let it sit for 5-10 minutes until the yeast is foamy.
- Add sugar, melted butter, eggs, and salt. Mix well until combined.
- Gradually add flour, one cup at a time, mixing until a soft dough forms.
- Knead the dough for 5-7 minutes on a floured surface (or use a stand mixer with a dough hook) until it is smooth and elastic.
- Place the dough in a greased bowl, cover it with a towel, and let it rise in a warm place for about 1-1.5 hours or until doubled in size.
- Make the Cinnamon Filling:
- In a small bowl, mix the brown sugar and cinnamon.
- Spread the softened butter over the rolled-out dough, then sprinkle the cinnamon-sugar mixture evenly over the buttered surface.
- Roll and Cut the Dough:
- Once the dough has risen, roll it out on a floured surface into a 16×12-inch rectangle.
- Starting from one long side, tightly roll up the dough into a log.
- Cut the log into 12 even slices (about 1.5 inches thick each).
- Second Rise:
- Place the rolls into a greased 9×13-inch baking pan, leaving a little space between each roll.
- Cover and let the rolls rise for another 30-45 minutes, or until they’re puffy.
- Bake the Rolls:
- Preheat your oven to 350°F (175°C).
- Bake the cinnamon rolls for 20-25 minutes, or until they’re golden brown on top. Be careful not to overbake, as they should be soft and gooey.
- Prepare the Cream Cheese Glaze:
- In a bowl, beat together the softened cream cheese, butter, powdered sugar, vanilla extract, and milk until smooth and creamy. Adjust the milk quantity for a thinner or thicker glaze as desired.
- Glaze the Rolls:
- Remove the cinnamon rolls from the oven and let them cool for a few minutes before spreading the cream cheese glaze over them.
Tips:
- For extra gooey rolls, pour a bit of heavy cream over the rolls before baking.
- If you like, add a dash of nutmeg to the filling for a little spice variation.
