1. Prepare the Crust

  • Preheat oven to 325°F (160°C).

  • In a bowl, combine graham cracker crumbs, sugar, and melted butter until evenly moistened.

  • Press the mixture firmly into the bottom of a 9-inch (23 cm) springform pan.

  • Bake for 10 minutes, then remove and let cool while you make the filling.

2. Make the Filling

  • In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy (no lumps!).

  • Add the sour cream and vanilla extract, mixing until fully combined.

  • Beat in the eggs one at a time, mixing on low speed just until incorporated (overmixing can cause cracks!).

3. Bake the Cheesecake

  • Pour the filling over the cooled crust and smooth the top.
