Directions:
- Preheat oven to 400°F.
- Lay out egg roll wrappers and divide corned beef, sauerkraut, Swiss cheese, and Russian dressing evenly among them.
- Roll up each wrapper, folding in the sides, and seal with a dab of water.
- Place the egg rolls seam-side down on a greased tin foil tray.
- Lightly spray the tops of the egg rolls with cooking spray.
- Bake for 15-20 minutes or until golden brown and crispy.
- Serve with additional Russian dressing for dipping.
