Make the batter: In a large mixing bowl, whisk together the water, eggs, sugar, and yeast. Add the flour and stir to combine. Let the batter rest for 20 minutes.
Add the rest of the ingredients and mix until fully combined.
Use a ladle to fry the fritters in hot oil until golden brown and puffy.

Make these fritters gluten free by using gluten-free all-purpose flour.
Don’t feel like carrots? Feel free to use any other root vegetables (onions, sweet potatoes, turnips, or beets).
Instead of ham, you could use other or any other protein you have leftover such as pulled pork, smoked chicken, cooked beef or even tofu.
Don’t make the oil too hot, otherwise the fritters will burn before fully cooked. Use a thermometer to heat the oil to about 350°F. The oil should also not be too cold, otherwise the fritters will absorb too much oil, making them greasy.
