Instructions

For the Coca-Cola Pound Cake:

Preheat the Oven:
Preheat your oven to 325°F (163°C). Grease and flour a 10-inch bundt pan or a 9×13-inch baking pan.
Mix the Wet Ingredients:
In a large bowl, beat together the eggs, vegetable oil, Coca-Cola, and vanilla extract until combined.
Add Dry Ingredients:
Add the cake mix, vanilla pudding mix, and salt to the wet ingredients. Mix everything together until smooth and well-combined. Make sure there are no lumps.
Bake the Cake:
Pour the batter into your prepared pan and spread it evenly.
Bake in the preheated oven for 45-55 minutes (if using a bundt pan) or 35-40 minutes (if using a 9×13-inch pan), or until a toothpick inserted into the center comes out clean.
Cool the Cake:
Once the cake is done, remove it from the oven and let it cool in the pan for about 10-15 minutes. Then, transfer it to a wire rack to cool completely.

Prepare the Frosting:
In a large bowl, beat together the cream cheese and unsalted butter until smooth and creamy.
Gradually add the powdered sugar, about 1 cup at a time, mixing well after each addition until smooth.
Add Flavor:
Mix in the vanilla extract and Coca-Cola (if using). Continue mixing until smooth and well combined.
Add the Coconut and Pecans:
Fold in the shredded coconut and chopped pecans into the frosting mixture.
Frost the Cake:
Once the cake is completely cooled, spread the frosting evenly over the top. If desired, you can also sprinkle extra coconut and pecans on top of the frosting for added texture and decoration.
