Coconut Cake with Seven-minute Frosting

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. In a bowl, mix together the flour, baking soda, baking powder, and salt, then set it aside. In a large bowl, cream the butter and sugar together until the mixture is light and fluffy. Add the eggs one at a time, making sure to beat well after each addition. Gradually incorporate the dry ingredients into the butter mixture, alternating with the coconut milk and vanilla. Stir in the shredded coconut.
