How to Prepare Coconut Delicacy with Plum Syrup
Preparation of the delicacy:
In a large saucepan, whisk together the milk, coconut milk, and sugar. Bring the mixture to medium heat, stirring constantly to prevent it from sticking to the bottom of the pot.
In a separate bowl, dissolve the cornstarch in a little cold water so that there are no lumps.
When the milk mixture begins to heat up, add the dissolved cornstarch little by little, stirring constantly. Continue cooking over medium heat until the mixture thickens, which will take 10 to 15 minutes.
Once the delicacy has a firm but creamy consistency, add the vanilla essence and the grated coconut (if you have decided to use it). Stir well and remove from heat.
Pour the delicacy into a mold lightly moistened with water or into individual molds if you prefer small portions. Let cool to room temperature and then refrigerate for at least 3 hours or until completely firm.

Place the prunes in a saucepan along with the water, sugar and cinnamon stick. Bring to a boil over medium-high heat, stirring occasionally so the sugar dissolves completely.
Lower the heat and cook for about 15-20 minutes, or until the plums are soft and the liquid has reduced to form a thick syrup.
Remove from the heat, add the lemon juice and let the syrup cool before serving it over the coconut delicacy.
