Let it sit for 5 minutes, then stir again to prevent clumping.
Cover and refrigerate for at least 4 hours or overnight until thickened.
2. Make the Mango Layer
In a bowl, toss diced mangoes with lime juice and honey (if using).
3. Assemble & Serve
Spoon chia pudding into serving glasses, filling halfway.
Add a generous layer of mango mixture on top.
Garnish with toasted coconut flakes and lime zest.
