Method:

Mix butter and Sugar in a bowl until light and creamy.
Add the eggs, mix well and then add the Vanilla Essence.
Now add your sifted flour and baking powder.
Followed by the Coconut.
Now mix gently using your hands until the mixture has come together.
Use a rolling pin and roll out dough on a lightly floured surface.
I don’t roll the dough out to thin.
Then using a fork scrape your dough lightly.
Use a cookie cutter of your choice and press out dough.
Place in a greased baking pan.
And bake in a 180 C preheated oven for 12 minutes.
When cookies are done, remove from oven and dip in castor sugar immediately.
