Step-by-Step Directions
1. Prepare the Coffee Mixture
In a small bowl, dissolve the instant coffee granules in hot water. Stir until fully dissolved and set aside to cool.
2. Cream the Butter and Sugars
Using a stand mixer or hand mixer, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy. This should take about 2-3 minutes.
3. Add Eggs and Vanilla
Beat in the eggs one at a time, followed by the vanilla extract and the cooled coffee mixture. Mix until well combined.
4. Combine Dry Ingredients
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
5. Fold in Chocolate Chips
If using, gently fold the chocolate chips into the dough with a spatula.
6. Chill the Dough
For best results, chill the dough in the refrigerator for at least 30 minutes. This helps the cookies retain their shape and enhances the flavor.
7. Bake the Cookies
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper. Scoop tablespoon-sized portions of dough onto the prepared sheets, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
