Sauté the base
In a large pot, melt butter over medium heat. Add onions and garlic, cooking until softened and fragrant, about 3 minutes.
Add the veggies
Toss in carrots and potatoes, stirring for 5 minutes. Pour in the beef broth and beer, then bring to a boil.
Simmer & flavor
Add thyme, pepper, salt, mustard, and Worcestershire sauce. Reduce heat to low, cover, and simmer for 20 minutes or until potatoes are tender.
Add the cabbage & beef
Stir in chopped cabbage and cooked corned beef. Simmer uncovered for another 10–15 minutes, allowing flavors to blend and the cabbage to soften.
Finish & serve
Taste and adjust seasoning if needed. Ladle into bowls, sprinkle with fresh parsley, and serve with warm crusty bread or buttered rolls.
