Instructions:
1️⃣ Season the chicken breasts with salt and pepper.
2️⃣ In a large skillet, heat olive oil over medium-high heat. Sear the chicken breasts on each side until golden brown, about 3-4 minutes per side. Transfer to the slow cooker.
3️⃣ In a bowl, whisk together chicken broth, heavy cream, garlic, thyme, rosemary, and parsley. Pour over the chicken in the slow cooker.
4️⃣ Cover and cook on LOW for 4-5 hours or until the chicken is tender and cooked through.
5️⃣ In a small bowl, mix cornstarch and water to create a slurry. Stir into the slow cooker. Cook on HIGH for an additional 30 minutes or until the sauce thickens.
6️⃣ Serve the chicken with the creamy sauce spooned over the top, garnished with fresh parsley.
Variations & Tips:
For a lighter version: Substitute heavy cream with half-and-half or a mix of milk and Greek yogurt.
Want some heat? Add red pepper flakes to the sauce.
Boost the flavor: Add sliced mushrooms or sun-dried tomatoes to the slow cooker.
Prefer dark meat? Use bone-in chicken thighs for a richer flavor.
