Prepare the Waffle Batter: In a mixing bowl, whisk together the cornbread mix, buttermilk, egg, and melted butter until smooth. Stir in cheddar cheese and bacon if desired.

Cook the Waffle Bites: Preheat a mini waffle maker and lightly grease with cooking spray. Spoon about 1 tablespoon of batter into each section and cook for 3-4 minutes or until golden brown. Repeat with remaining batter.

Make the Honey Butter Syrup: In a small saucepan over low heat, combine honey, butter, maple syrup (if using), and a pinch of salt. Stir until the butter melts and the mixture is smooth. Remove from heat.

Serve: Arrange the waffle bites on a serving platter and drizzle with the warm honey butter syrup. Serve immediately and enjoy!
