Step 2: Prepare the Biscuit Dough

Follow the instructions on your Cheddar Bay Biscuit Mix package. Typically, you’ll mix the biscuit mix with water and the included cheese packet until a soft dough forms.

To level up the flavor, stir in:

1 tsp garlic powder
1 tsp Italian seasoning

This adds a beautiful herby aroma that pairs perfectly with the crab filling.

Set the dough aside while you work on the filling.

Step 3: Make the Crab Filling

In a medium bowl, combine:

1 pound lump crab meat
¼ tsp paprika
½ tsp onion powder
1 tbsp mustard
½ cup mayonnaise
½ sleeve crushed Ritz crackers
1 cup grated Parmesan

Mix everything gently to keep the crab meat as intact as possible. The texture should be creamy but firm enough to scoop. If the mixture feels too dry, add an extra spoonful of mayonnaise.

Step 4: Assemble the Biscuits

Now for the fun part — putting it all together.

Dust your hands with flour to prevent sticking.
Take a small scoop (about a tablespoon) of the biscuit dough and flatten it slightly into a round disc.
Place a heaping spoonful of crab filling in the center.
Take a bit more biscuit dough and place it on top, pinching the edges closed to seal the crab inside.
Gently roll or shape into a ball and place into the muffin tin cup.

Repeat this process until all dough and filling are used. You should end up with 12–16 stuffed biscuits, depending on how much filling you use per biscuit.

Step 5: Bake to Golden Perfection

Place the muffin tins in the preheated oven and bake for 12 to 15 minutes, or until:

The biscuits are puffed up and golden brown on top
The tops are slightly crispy
A toothpick inserted in the side of the biscuit comes out clean

Optional: In the last 2 minutes of baking, sprinkle a little extra Parmesan cheese on top for added crust and flavor.

Step 6: Brush with Lemon Butter

While the biscuits are still warm, brush the tops with a mixture of:

2–3 tablespoons melted butter
1 teaspoon fresh lemon juice

This final touch adds brightness and brings all the savory flavors together. You can even add a pinch of parsley or garlic to the melted butter for an extra flavor boost.
