Ingredients:
For the Crust:
- 1 1/2 cups graham cracker crumbs (or digestive biscuit crumbs)
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon (optional)
- 1/2 cup unsalted butter, melted
For the Filling:
- 3 packages (8 ounces each) cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/2 cup sour cream
- 1/2 cup heavy cream
- 1 cup caramel sauce, plus extra for drizzling
Instructions:
Step 1: Prepare the Crust
- Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
- In a medium bowl, mix graham cracker crumbs, sugar, and cinnamon (if using). Add melted butter and stir until evenly moistened.
- Press the mixture into the bottom of the springform pan to form an even layer. Bake for 10 minutes. Let it cool while preparing the filling.
Step 2: Make the Filling
- In a large bowl, beat the softened cream cheese until smooth and creamy.
- Gradually add the sugar, beating until fully combined.
