Add Herbs:
Stir in fresh basil, cilantro, and scallions. Season with salt and pepper to taste.
Serve:
Place noodles in a bowl and ladle soup over them.
Top with additional cilantro, scallions, and lime wedges for extra flavor.
Tips:
For added flavor, consider adding lemongrass and galangal, or 2-3 tablespoons of fish sauce to give it a Tom Kha twist.
Store noodles and soup separately to keep leftovers fresh longer.
