In a medium bowl, beat the cream cheese, sugar, and vanilla extract until smooth.
Lay an egg roll wrapper on a clean surface. Place about 2 tablespoons of the cream cheese mixture in the center, then top with a tablespoon of cherry pie filling.
Fold the bottom corner of the wrapper over the filling, fold the sides inward, and then roll up tightly. Seal the edges with a little water.
Repeat with the remaining wrappers and filling.
Preheat the air fryer to 375°F (190°C).
Lightly spray the egg rolls with cooking spray and place them in the air fryer basket in a single layer. Cook for 8-10 minutes, turning halfway through, until golden brown and crispy.
Remove from the air fryer and let cool slightly before dusting with powdered sugar, if desired.
