- In a large bowl, combine the chopped chicken, eggs, salt, sweet paprika, black pepper, mayonnaise, grated mozzarella cheese, chives, and garlic powder.
- Mix everything together until well combined and evenly coated.
2. Cook the Fritters:
- Heat a drizzle of vegetable oil in a skillet over medium-low heat.
- Shape the chicken mixture into small patties or fritters using your hands or a spoon.
- Carefully place the fritters in the skillet and cook for 4–5 minutes on each side, or until golden brown and fully cooked through.
3. Serve:
- Once cooked, transfer the fritters to a plate lined with paper towels to drain any excess oil.
- Serve hot and enjoy!
