1. Prepare the Chicken Mixture:

  • In a large bowl, combine the chopped chicken, eggs, salt, sweet paprika, black pepper, mayonnaise, grated mozzarella cheese, chives, and garlic powder.
  • Mix everything together until well combined and evenly coated.

2. Cook the Fritters:

  • Heat a drizzle of vegetable oil in a skillet over medium-low heat.
  • Shape the chicken mixture into small patties or fritters using your hands or a spoon.
  • Carefully place the fritters in the skillet and cook for 4–5 minutes on each side, or until golden brown and fully cooked through.
