Wash and dry the potatoes, then dice them into small, evenly sized cubes to ensure even cooking.
Peel and slice the onion into thin rings or half-moons, depending on your preference.
3. Season the Potatoes and Onions
In a large mixing bowl, toss the potatoes and onions with olive oil until they’re well-coated.
Add garlic powder, smoked paprika (if using), salt, and pepper. For a more robust flavor, add fresh rosemary or thyme.
4. Spread on a Baking Sheet
Arrange the seasoned potatoes and onions in a single layer on a baking sheet lined with parchment paper or foil for easy cleanup.
Make sure the potatoes and onions are spread out without overlapping, as this helps them get crispy rather than soggy.
5. Bake Until Crispy
Bake in the preheated oven for 25-30 minutes, flipping halfway through, until the potatoes are golden brown and crispy on the outside and soft on the inside. If they need more time, bake for an additional 5-10 minutes, watching closely to prevent burning.
6. Serve and Enjoy
Once the potatoes and onions are crispy and caramelized, remove them from the oven and let them cool for a minute before serving. They’re delicious on their own or with a dollop of sour cream or a sprinkle of fresh herbs.
