1. Prepare the Rice Mixture

  • In a bowl, combine 200g of cooked rice with 1 beaten egg. Mix well.

2. Sauté the Vegetables

  • Heat a drizzle of olive oil in a pan over medium heat.
  • Add the chopped onion and stir-fry for 2 minutes.
  • Add the chopped carrot and stir-fry for an additional 3-5 minutes, until tender.
  • Transfer the sautéed vegetables to the bowl with the rice mixture.

3. Combine Ingredients

  • Add 1 tbsp of all-purpose flour and 2 tbsp of Parmesan cheese to the bowl.
  • Season with salt, black pepper, and a pinch of crushed red pepper.
  • Mix everything well until thoroughly combined.

4. Form and Coat the Patties

  • Place bread crumbs on a plate.
  • Scoop the rice mixture into balls using a spoon or your hands, then flatten each ball to form a patty.
  • Roll each patty in the bread crumbs to coat evenly. Repeat until all the mixture is used.

5. Fry the Patties
