1. Prepare the Ingredients:
Place the chicken breasts in the bottom of the crock pot.
2. Add the Broth and Seasonings:
Pour in the chicken broth and diced tomatoes.
Add the Italian seasoning, garlic powder, onion powder, salt, and black pepper.
Stir gently to combine.
3. Slow Cook the Soup:
Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until the chicken is tender and fully cooked.
4. Shred the Chicken:
Remove the chicken breasts from the crock pot and shred them with two forks.
Return the shredded chicken to the crock pot.
5. Add the Cream and Parmesan:
Stir in the heavy cream and Parmesan cheese until well combined.
If using pasta, add it now and cook for an additional 20-30 minutes on HIGH, or until the pasta is tender.
6. Add Optional Spinach:
Stir in the chopped spinach and cook for 5 minutes, just until wilted.
7. Serve:
Ladle the soup into bowls and garnish with fresh basil and additional Parmesan cheese.
Serve with crusty bread or garlic toast for dipping.

Thicker Soup: For a creamier soup, blend a small portion of the soup and return it to the pot.
Pasta Tip: Cook pasta separately if you plan to store leftovers to prevent it from becoming soggy.
