CROCKPOT GARLIC BUTTER BEEF BITES & POTATOES

1. Place the beef cubes, quartered potatoes, and chopped onion into a large crockpot. (5 minutes)
2. In a separate bowl, combine the minced garlic, melted butter, Worcestershire sauce, soy sauce, Dijon mustard, smoked paprika, and black pepper. (3 minutes)
3. Pour the garlic butter mixture over the beef and potatoes in the crockpot. (2 minutes)
4. Add the beef broth to the crockpot. (1 minute)
5. Cover and cook on low for 8-10 hours, or on high for 4-6 hours, until the beef is tender and the potatoes are easily pierced with a fork. (8-10 hours low / 4-6 hours high)
6. In a small bowl, whisk together the cornstarch and cold water to create a slurry. (1 minute)
7. During the last 30 minutes of cooking, stir the cornstarch slurry into the crockpot. This will thicken the sauce. (30 minutes)
8. Once the sauce has thickened, garnish with fresh chopped parsley and serve hot. (2 minutes)
