- Slice the potatoes into 1/2-inch thick rounds.
- In a large mixing bowl, toss the potato rounds with olive oil, sea salt, black pepper, onion powder, and paprika until evenly coated.
- Bake the Potato Rounds:
- Arrange the seasoned potato rounds in a single layer on the prepared baking sheet, ensuring they do not overlap.
- Bake in the preheated oven for 25 to 30 minutes, or until the potatoes are tender and crispy on the outside. Flip the potato rounds halfway through to ensure even cooking.
- Add the Cheese:
- Remove the baking sheet from the oven and evenly sprinkle the grated cheese over the top of the potato rounds.
- Return the baking sheet to the oven and bake for an additional 5 to 7 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve:
- Once the cheese is melted, remove the potato rounds from the oven and let them cool slightly.
- Sprinkle with chopped fresh parsley and optional chives for added flavor and color.
