- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare Chicken Breasts: Lay the chicken breasts flat on a cutting board. Make a horizontal cut through the center of each chicken breast, creating a pocket for the stuffing. Be careful not to cut through the other side.
- Mix Filling: In a bowl, combine chopped broccoli, shredded cheddar cheese, mayonnaise, minced garlic, Dijon mustard, dried thyme, salt, and pepper. Mix until all ingredients are well combined.
- Stuff Chicken Breasts: Generously stuff each chicken breast with the broccoli and cheddar mixture, pressing down gently to secure the filling.
- Secure with Toothpicks: If needed, secure the opening of each stuffed chicken breast with toothpicks to keep the filling intact during cooking.
- Season and Brush with Olive Oil: Season the stuffed chicken breasts with additional salt and pepper. Brush the outside of each breast with olive oil, providing a golden and flavorful finish.
- Bake: Place the stuffed chicken breasts in a baking dish and bake in the preheated oven for approximately 25-30 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
