Instructions:
Preheat your oven to 180°C (350°F) and line a muffin tin with cupcake liners.
In a large bowl, beat the eggs, sugar, and vanilla extract until light and fluffy. Add the melted margarine and mix until well combined.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the egg mixture, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined.
Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
Allow the cupcakes to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely before frosting or serving
