Instructions:
Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan, then dust it lightly with flour.
In a large mixing bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
In a separate bowl, blend the orange juice, sugar, vegetable oil, and vanilla extract until the sugar dissolves.
Gradually add the dry mixture to the wet ingredients, stirring gently until just combined. Fold in the dried fruits and chopped nuts (if using).
Pour the batter into the prepared cake pan and smooth the top. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
