Cinnamon Apple Cake
Servings: 12
Ingredients
2 cups all-purpose flour
1 1/2 cups granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
4 cups peeled and chopped apples (about 4 medium apples)
1/2 cup chopped walnuts (optional)
Directions
Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
In a large mixing bowl, cream together the butter and sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
In another bowl, whisk together the flour, baking soda, cinnamon, and salt.
Gradually add the dry ingredients to the creamed mixture, mixing until just combined.
Fold in the chopped apples and walnuts, if using.
Spread the batter evenly into the prepared baking pan.
Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan before serving.
Variations & Tips
For a nut-free version, simply omit the walnuts. If you have picky eaters who aren’t fans of chunks of apple, try grating the apples instead of chopping them to create a smoother texture. You can also add a crumb topping by mixing 1/2 cup of brown sugar, 1/4 cup of flour, 1/4 cup of butter, and 1 teaspoon of cinnamon, then sprinkling it over the batter before baking for a crunchy twist.
