1 1/2 cups vegetable oil
1 cup buttermilk, at room temperature
2 large eggs, at room temperature
2 tablespoons (1 oz.) purple food coloring
1 teaspoon white distilled vinegar
1 teaspoon vanilla extract
Cream cheese frosting (homemade or store-bought)
Directions:
Preparation: Preheat your oven to 350°F (175°C). Grease, flour, and line two 9-inch round cake pans with parchment paper.
Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, baking soda, salt, and cocoa powder.
Combine Wet Ingredients: In another bowl, mix vegetable oil, buttermilk, eggs, purple food coloring, vinegar, and vanilla extract until well combined.
Combine: Gradually add the wet ingredients to the dry ingredients, stirring until smooth.
Bake: Divide the batter evenly between the prepared cake pans. Bake for approximately 30 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Frost: Once the cakes are completely cool, frost them with cream cheese frosting. Decorate as desired.
