Making the Filling
In a mixing bowl, combine the cooked rice with onions, garlic, fresh herbs, olive oil, and lemon juice. Season generously with salt and pepper. If you like a bit of texture, add some chopped nuts or raisins. Mix everything well until the ingredients are evenly distributed.
Assembling the Grape Leaves
Lay a grape leaf flat on a clean surface with the shiny side down and the stem towards you. Cut off the stem. Place a small amount of filling near the stem end, then fold in the sides and roll the leaf tightly into a neat parcel. Repeat with the remaining leaves and filling.
Cooking Your Stuffed Grape Leaves
Arrange the stuffed leaves in a pot in tight layers. Pour over enough water to just cover them and add a little more lemon juice and a drizzle of olive oil. Place a plate on top of the leaves to keep them submerged, then bring the water to a gentle simmer. Cook for about 40 to 50 minutes until the leaves are tender.
