- Preheat Oven: Preheat your oven to 350°F (180°C).
- Prepare Bell Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Set the peppers aside.
- Cook Quinoa: Cook the quinoa according to package instructions.
- Sauté Vegetables: In a large pan, heat the olive oil over medium heat. Add the diced onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
- Mix Ingredients: Add the diced tomatoes, seafood, peas, diced bell pepper, and bacon (if using) to the pan. Stir to combine. Season with salt and pepper to taste.
- Combine with Quinoa: Stir in the cooked quinoa and chopped parsley.
- Stuff Peppers: Fill each bell pepper with the seafood mixture. Place the peppers in a baking dish.
- Bake: Bake the stuffed peppers for 25-30 minutes, or until the peppers are tender.
- Add Cheese: Sprinkle the Parmesan cheese over the top of the peppers. Bake for an additional 5 minutes, or until the cheese is melted and bubbly.
- Serve: Serve the peppers hot and enjoy!
