Ingredients:

  • 1–4 pound beef chuck roast
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2/3 cup beef stock
  • 1 cup stout or porter beer (or your preferred brew)
  • 2 bay leaves
  • 2 fresh thyme sprigs
  • 2 carrots, peeled and cut into chunks
  • 2 stalks of celery, diced
  • Optional: 2 teaspoons cornstarch to thicken the sauce
