- Prepare the Potatoes:
- Peel and finely grate the potatoes.
- Place the grated potatoes in a large bowl and cover them with water. Mix by hand and set aside.
- Prepare the Onion and Pepper Mixture:
- Thinly slice the onion.
- Seed and chop the red bell pepper into bite-sized pieces.
- Heat the oil in a skillet over medium-high heat. Add the sliced onion and sauté for a few minutes.
- Add the chopped red pepper, stir to combine, and let it simmer for 5-7 minutes. Remove from heat.
- Make the Potato Mixture:
- Drain the water from the grated potatoes and press out any excess moisture.
- Place the potatoes in a large bowl.
- Crack the eggs into the bowl with the potatoes and add salt, black pepper, nutmeg, and marjoram. Mix thoroughly.
- Assemble and Bake:
- Preheat your oven to 180°C (350°F).
- Lightly grease a baking dish.
- Spread the potato mixture evenly in the dish.
- Distribute the onion and pepper mixture evenly over the potatoes.
- Optionally, top with grated cheese.
- Bake in the preheated oven for about 50 minutes, or until the potatoes are tender and the top is golden brown.
