- Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin with cooking spray or line with muffin liners.
- Prepare the Vegetables:
- Chop, dice, or grate your selected vegetables and herbs. Set them aside in a bowl.
- Mix the Eggs:
- In a large bowl, crack the eggs and beat them until fully mixed. Season with salt and pepper.
- Combine Ingredients:
- Add the chopped vegetables, herbs, and shredded cheese to the beaten eggs. Mix everything together until well combined.
- Fill the Muffin Tin:
- Pour the egg mixture evenly into the muffin cups, filling each about 3/4 full.
- Bake:
- Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the muffins are set and slightly golden on top.
- Cool and Serve:
- Let the muffins cool for a few minutes in the tin before removing. Serve warm, or store for later use.
