Assemble the Roll Ups
Lay out your tortillas – I like working with 2 at a time so they don’t dry out. Layer each with provolone, roast beef, and a sprinkle of those gorgeous caramelized onions. Roll them up tightly, like you’re making a burrito but um… neater? (I still sometimes make a mess!)
Step 3: The Secret Finishing Touch
Mix melted butter with garlic powder – this is totally my own addition and makes SUCH a difference. Brush it over the rolled tortillas. Sometimes I get carried away and add extra garlic because… well, who’s counting?
Step 4: Get Them Crispy
Heat a large skillet over medium-high heat. Place the rolls seam-side down and cook for about 2-3 minutes per side until golden brown and crispy. The cheese gets all melty and… honestly, it’s torture waiting for them to cool enough to eat!
