In a medium bowl, whisk the eggs to break them up. Add the milk and whisk again to combine.
Prepare three bowls: one for flour, one for the egg and milk mixture, and one for bread crumbs. Arrange them in a line (flour, egg wash, bread crumbs).
Dip each piece of cheese into the flour, then into the egg wash, and finally roll it in the bread crumbs. Place coated cheese pieces on a plate.
Heat approximately 2 inches of vegetable oil in a medium skillet to 350°F (180°C). Test the oil by placing a wooden spoon handle into it; if bubbles form and roll around the handle, the oil is ready.
Set up a plate lined with paper towels.
Add 5-7 cheese bites to the hot oil at a time, ensuring they remain separated to prevent sticking. Fry for about 30 seconds, or until they are golden brown.
Remove fried cheese bites using a slotted spoon, and transfer them to the paper towel-lined plate to drain excess oil.
Continue frying batches of cheese bites until all pieces are cooked.
Serve the fried cheese bites immediately, either with pasta sauce or on their own.

For a spicier flavor, sprinkle cayenne pepper into the bread crumbs before coating the cheese.
