Mix the Dough: In a mixing bowl, combine the self-rising flour, Greek yogurt, and salt. Mix until a dough forms. You may need to use your hands to knead the dough until it comes together and is smooth.
Divide the Dough: Divide the dough into 4 equal portions.
Roll Out the Dough: On a lightly floured surface, roll out each portion of dough into a thin circle or oval shape. Aim for about 1/8 inch thickness.
Cook the Flatbreads: Lightly grease the preheated skillet or griddle with cooking spray or olive oil. Place one or two flatbreads onto the skillet and cook for about 2-3 minutes on each side, or until golden brown and cooked through. Repeat with the remaining portions of dough.
Serve: Once cooked, remove the flatbreads from the skillet and let them cool slightly before serving.
Optional Variations:
Add herbs or spices to the dough for extra flavor, such as garlic powder, dried oregano, or rosemary.
Sprinkle sesame seeds, poppy seeds, or everything bagel seasoning on top before cooking for added texture and flavor.
Serve with your favorite dips, spreads, or toppings, such as hummus, tzatziki, salsa, or grilled vegetables.
