- 2 tablespoons olive oil
- 2 large onions, diced
- 5 garlic cloves, minced
- 3 pounds ground beef (preferably chuck)
- 2 teaspoons tomato paste
- 1 (12 oz) can crushed tomatoes
- 3 cups beef broth
- 2 tablespoons chili powder
- 1/2 teaspoon smoked paprika
- 1/4 tablespoon ground cumin
- 1/2 teaspoon dried oregano
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 2 (15 oz) cans kidney beans, rinsed and drained
- 1 (15 oz) can pinto beans, rinsed and drained
- Salt and pepper to taste
- Optional garnishes: shredded cheddar cheese, sour cream, chopped green onions, fresh cilantro
