- Heat olive oil in a large saucepan over medium-high heat. Sauté diced onions for about 5 minutes until translucent. Add minced garlic and cook for an additional minute until fragrant.
- Add ground beef to the saucepan. Cook and brown the beef while breaking it apart with a spoon. Drain any excess fat if necessary.
- Stir in tomato paste, crushed tomatoes, beef broth, and reduce heat to low. Let the mixture simmer.
- Add chili powder, smoked paprika, ground cumin, dried oregano, cayenne pepper, salt, and pepper to the beef mixture. Stir well until fully combined.
- Let the chili simmer uncovered for about an hour over low heat, stirring occasionally. If it thickens too much, add additional beef broth to adjust the consistency.
- After 30 minutes of simmering, stir in the kidney beans and pinto beans. Allow the flavors to meld together.
- Taste and adjust seasoning if necessary. Serve hot with optional garnishes and accompaniments of your choice.
