- Prepare the Bread Dough:
- In a large bowl, combine 500 g flour, 300 g semolina, 10 g salt, and 5 g baker’s yeast.
- Make a well in the center and add 3 tablespoons olive oil.
- Gradually pour in lukewarm water, starting with about 400 ml and mixing until the dough starts to come together. Add more water if needed.
- Knead the dough on a lightly floured surface for about 10 minutes, until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
- Prepare the Stuffing:
- Heat a bit of oil in a pan over medium heat.
- Add 1 finely chopped onion and 2 minced garlic cloves, sauté until translucent.
- Add 1 green pepper and 1 red pepper, and cook for a few more minutes.
- Add 500 g ground beef and cook until browned. Drain excess fat if needed.
- Season with salt, pepper, paprika, and turmeric to taste.
- Stir in 1/2 tablespoon tomato paste and cook for a few more minutes.
- Remove from heat and stir in fresh parsley. Allow the filling to cool slightly.
- Assemble the Stuffed Bread:
- Preheat your oven to 200°C (390°F).
- Punch down the risen dough and divide it into two equal parts.
- Roll out each part into a rectangle or oval shape.
- Spread the meat filling evenly over one of the dough pieces, leaving a border around the edges.
- Place the other dough piece on top, pinching the edges to seal.
- Transfer to a baking sheet lined with parchment paper.
- Brush the top with a little oil and sprinkle with cheese.
- Bake:
- Bake in the preheated oven for 25-30 minutes, or until golden brown and cooked through.
- Allow to cool slightly before slicing.
- Serve:
- Slice and serve warm. Enjoy as a main dish or snack!
