- Cook the Sausage: In a skillet over medium heat, cook the sausage until browned and cooked through. Break it up into crumbles as it cooks. Drain any excess fat and set aside to cool slightly.
- Mix Ingredients: In a large mixing bowl, combine the cooked sausage, lightly whisked eggs, grated cheddar cheese, and baking mix. Stir until well combined.
- Fill Muffin Tin: Spoon the mixture evenly into the prepared muffin tin, filling each cup about three-quarters full.
- Bake: Bake in the preheated oven for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
- Cool and Store: Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Store the muffins in an airtight container in the refrigerator or freeze them for longer storage.

- Microwave: Pop a muffin in the microwave for about 30 seconds to 1 minute until heated through.
